An example of intra-regional and extra-regional urban supply. Beef in Morelia at the end of the 19th century

This essay addresses the beef shortage in the city of Morelia during the last decades of the 19th century. From the daily records of livestock introduction for slaughter in the Municipal Slaughterhouse, it analyzes the origin of the cattle destined for urban consumption confirming that nearby productive units were a fundamental element in providing said cattle, but it also highlights the capital importance of extra-regional supply, since the animals from what is known as Tierra Caliente reached the highest percentage of slaughtered livestock, so the integration of the consumption center with its own production region turns out to be as transcendent as the relationship it establishes with other regions of a different productive vocation.
