The impact humid coffee beneficiary activity has on the quantity and quality of water is presented. The coffee activity is widely recognized for its economic, social and environmental benefit. Although these benefits are unquestionable, and the development of the activity is encouraged, it must also be recognized that water resource management is not a priority for the sector. By means of a case study in the municipalities of Xico and Teocelo, located in the central zone of Veracruz, where the coffee activity is widely practiced, it is evident water resource management is not a priority for the producers. Based on the research results, it is proposed that the environmental legislation in water resources should consider the different strata of producers, because the capacity of response of each one is conditioned by the means and levels of impact in the water resource.
