Impacto de las condiciones de extrusión en las propiedades físicas de mezclas de amaranto-avena en la elaboración de botanas de tercera generación con valor funcional

El desarrollo de botanas de tercera generación a partir de materias primas con valor nutricional ha despertado interés para obtener productos con mejores características nutricionales. El amaranto y la avena destacan por compuestos de interés; aun así, su composición puede influir en el comportamiento de las mezclas durante la extrusión y afectar la expansión del producto, por lo que se requiere controlar las condiciones de proceso que determinan su capacidad de expansión. El objetivo fue evaluar el efecto de la proporción de avena/amaranto y la temperatura de extrusión sobre el índice de expansión de pellets, así como evaluar la influencia de la velocidad de tornillo. Se empleó un diseño central compuesto rotable con 13 tratamientos, manteniendo 40% de almidón de maíz, y se realizaron pruebas complementarias a 100, 111, 126 y 141 rpm. Los pellets se obtuvieron mediante extrusión de doble tornillo y posteriormente se expandieron por microondas. Los datos se analizaron mediante análisis de varianza y prueba de diferencia mínima significativa de Fisher (p < 0.05). Después de la expansión, el índice de expansión de los tratamientos varió de 0.981 ± 0.057 a 1.302 ± 0.038. En las pruebas de velocidad de tornillo, el mayor índice de expansión se obtuvo a 126 rpm (1.519 ± 0.074), mientras que a 141 rpm disminuyó a 1.418 ± 0.045. Los resultados indican que la expansión dependió de las condiciones de procesamiento y la velocidad del tornillo ejerció un efecto significativo, con una respuesta no lineal después del calentamiento por microondas.
